Welcome to Cooking with El Capi, my first book of easy and delicious sea and river recipes, made with you in mind. You may be passionate about shellfish and fish like me, or simply read these lines to learn a little about the wonderful gastronomy that the marine world offers us, its delicacies and how to prepare them in a simple but delicious way.
In the midst of the rush of everyday life, we all want easy-to-prepare recipes, compiled in one place. It is quite common to find different types of food books, such as Latin, Italian, Spanish, vegetarian, and light cuisine, among others. However, like this one, I know there aren’t many out there. That’s why I started writing it. In this space, I not only share with you a small part of everything I have learned over more than 15 years as a chef and gastronomic researcher, and an expert in seafood, but I also share original recipes with an authentic touch and applied personal secrets, which I will reveal throughout this adventure that together we will discover Kitchen with El Capi was born after having received hundreds of emails, messages from many followers through Social Networks, and even comments from diners and customers who visit my businesses and the fishmonger in Cali, Colombia on a daily basis. They asked how to achieve better results in their preparations, use special ingredients and, on occasion, they encouraged me to teach classes and workshops, so I finally decided to publish a first compilation of some of my best-kept recipes.
